A dastarkhwan is the spread rolled out on the floor when guests arrive — the moment a house declares what it has and offers all of it. Nobody is served less because there are more people than expected. That is the whole idea, and it is older than any brand on this soil.
Because they are the three things an Indian home actually gives. Brass that darkens with use and brightens with care. Attar distilled the slow way in Kannauj, still into sandalwood, still by fire. And chai — the half-hour that belongs to nobody else, which is the most expensive thing anyone can hand you.
The thali is beaten in Moradabad, the attar distilled in Kannauj, the terracotta thrown in Bhuj. We did not go looking for the cheapest version of each. We went looking for the people who never stopped making the real one.
